Are they very stable ?
They are very stable I think due to the Claw at the bottom.

The base is not round. There are five spikes extending into the ground approximately six inches. Exposure to full sunlight for 8-10 hours can fully charge a solar panel.
Can this be used for a shade sail?
No, not without four-point support.
Is the height adjustable?
Height is not adjustable.
